I totally understand your frustration with the FG situation; it can be tricky sometimes. I had a similar issue with an English Ale where fermentation stalled due to temperature fluctuations. "That's a tricky situation! I've had similar mash issues before, and it's frustrating when your FG is off. I'd lean towards re-pitching with a fresh, active yeast, maybe a different strain like US-05, and letting it ferment out completely. Bottling too soon with a high FG can lead to bottle bombs.
