Avevo letto un articolo (ma la memoria non mi aiuta ora) sul ph della birra finale, devo approfondire sta storia degli acidi di cui parli. Sapevo che anche lievito ha bisogno di un range ottimale di ph in cui lavorare.
Comunque Comero lo capisco un po': ogni cosa in più che aggiungi alla birra è una cosa in più che ti ritrovi alla fine. Comunque ci sono anche le vie di mezzo: tra avere un ph 5.5 e 7-7,5 se ne può avere uno sui 6-6,5 ossia correzioni lievi.
